Crispy French Fries

Hands down, these are the easiest, most delicious fries ever!

Because of how starch interacts with the frying oil, this method
will only work well with a less starchy potato, like the Yukon Gold. 
(Red potatoes worked well.)

Super Simple French Fries
2 1/2 lbs. Yukon Gold potatoes (about 4-5 large potatoes)
6 cups coconut oil (I used less)
Sea salt

Line a sheet pan or large plate with a few layers of paper towels.
Set it aside.

Cut the long sides in three or four sticks.

Then cut the potato into fries.

You want them to be about a quarter-inch thick, which looks
about like this (balanced on a 10-inch butcher’s knife).

Set a large, heavy-bottomed pot on the stove. Pour in the oil.

Put the cut potatoes into the cold oil. Don’t turn the heat on yet.

When all the potatoes are in the oil, wiggle them around so that
they’re all submerged.

Now turn the heat on high.  After about 5 minutes or so,
the oil should come to a rolling boil.

Fry the potatoes like this for 15 minutes, untouched.
Don’t stir them at all. Just keep an eye on the pot.

After about 15 minutes, give the fries a gentle stir to loosen them up.
If any are stuck to the bottom, give them a nudge to unwedge them.

Fry like this, stirring occasionally, for another 5-10 minutes,
until crisp, golden, and done to your liking.

Fish them out of the oil with a spider or large slotted spoon. Let
them drip for a sec over the pot to lose any excess oil.

Transfer to your paper-towel lined pan.

Sprinkle with sea salt when they’re hot out of the oil.

Roasted Potato Stacks

 
3-4 regular-sized potatoes, peeled, thinly sliced with mandoline
1/3 c. organic extra virgin olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parlsey
1/2 tsp sea salt
1/8 tsp red pepper flakes
Freshly ground black pepper to taste
Fresh parsley
 
Preheat oven to 375 degrees.
Coat a muffin tin lightly with olive oil.
 
In a small bowl, mix olive oil, garlic powder, onion powder, dried parsley, sea salt, and black pepper.

Stack 4-5 potato slices in a muffin tin, and then pour a little olive oil mixture over the stack. Top with 4-5 more slices and a little more oil.
Repeat in the remaining muffin tins.
 
Bake 20-30 minutes, or until the potatoes are crispy on the edges.
Top with fresh parsley.

Crash Hot Potatoes

 

  • 12 whole New Potatoes (or Other Small Round Potatoes)
  • 3 Tablespoons Organic Extra Virgin Olive Oil
  • Sea Salt To Taste
  • Freshly Ground Black Pepper To Taste
  • Rosemary (or Other Herbs Of Choice) To Taste

 

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.

On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.

With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.

Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.).

Bake in a 450 degree oven for 20-25 minutes until golden brown.

Corn Bean Dip

2 cups cooked black beans
2 cups cooked corn
1 16-oz jar salsa
1 red onion, chopped
1 red bell pepper, chopped
1 Tbsp cumin
Juice of 1 Lime
1 tsp garlic, chopped


Mix together beans and corn. Add remaining ingredients and mix well.

Spinach and Corn Mashed Potatoes

This isn't a combination that I ever would have dreamed of, but it's so good! In my book, it's comfort food at its finest.

Since I'm beyond sleep deprived, still sick, and now have four sick kiddos, none of whom have the same thing I have, I'm in definite need of comfort food. I'm going to do my best to make this tonight!


Spinach and Corn Mashed Potatoes



3 lbs red potatoes, peeled and quartered
1/2 tsp sea salt
1 c Earth Balance, soy-free
1 c milk substitute of choice, unsweetened*
Sea salt and freshly ground black pepper
2 Tbsp olive oil
3 c whole kernel corn
20-oz fresh baby spinach, stems removed
3 tsp garlic, minced

Fill a large pot with water, add 1/2 tsp sea salt, and bring to a boil.
Add potatoes and boil until tender, about 15 minutes.
Drain well and return potatoes to the pot.
Add Earth Balance and milk substitute, and mash potatoes until light and fluffy.
Season to taste with sea salt and pepper.
Heat a large skillet over medium heat.
Add olive oil and corn, and sauté for 2 or 3 minutes.
Stir in spinach and garlic and sauté just until spinach is wilted.
Fold mixture into mashed potatoes.
Add salt and pepper to taste and serve!

*This recipe can be grain-free, depending upon the milk substitute used.
